Directions:

1. Preheat oven to 350 degrees Fahrenheit

2. Put 3 tomatoes, 4 ounces of oil, wine vinegar, parsley, sugar, mint, oregano, basil, capers and garlic in a blender and puree into a sauce

3. Add salt and pepper

4. Chop the last tomato and set aside

5. Heat 1 ounce of oil in a large frying pan on medium heat and sauté onions in the oil for 10 minutes or until lightly browned.

6. Combine all of the chopped vegetables and tomato sauce from the blender in a large bowl, then transfer to a baking pan

7. Bake for 1 hour or until tender
